I am just going to start by saying that I am obsessed. Completely obsessed. With what you ask? Well, obviously with popsicles. I just got my new popsicle molds and I have been loving them. They have exactly the right size and look really, really cute. The recipe that I’m writing about is actually the first variation of many to come. I fell in love with the combination of strawberries, banana and yogurt immediately. So, I just had to write about these amazing popsicles.
What you’ll need:
1 1/2 cups strawberries
1 cup yogurt
stevia to sweeten
a few drops of vanilla extract
To create the popsicles I first took half a banana and mashed it completely using a fork. I, then, added one cup of yogurt, and just a few drops of vanilla extract. I mixed these ingredients together until I got a smooth texture.
To prepare the strawberries, I went ahead and washed them and cut them into very small pieces. Again, I added these to the yogurt mixture. However, I chose not to mix them in completely to get a kind of marble effect for the end product. The last step is to add stevia to sweeten the mixture. Just add enough depending on how sweet you want your popsicles to be. I chose not to add a lot since the mashed banana already added a lot of sweetness.
Pour the mixture into your popsicle molds and let it freeze for approximately an hour. Then, place your popsicle sticks halfway inside and let the popsicles freeze for a few hours until ready. (Mine took about 4 hours) I always find it a great tip not to put the sticks in immediately, since they often don’t stay where they are supposed to. If you let the popsticks cool down and harden a bit first, it becomes a lot easier.
They turned out to be absolutely delicious and are so much healthier than the versions commonly sold at stores. These strawberry banana popsicles are even better than I expected. I am already planning on experimenting with different fruits. So many possibilities to try! Yes, I told you that I am kind of obsessed. Enjoy!
